The only thing that’s really thrived in my garden this year are my beets.
We’ve been eating beet greens, and I finally decided it was time to do something more with them. My grandma makes pickled beets that I just love, so I called her up and got the recipe. Then we tackled the garden:
The girls were excited to help … even if my green onions took a trampling while we dug up the beets!
Washing the beets was almost as much fun as picking them!
Then I cooked them up, skinned them, and canned them.
Where was J this whole time, you’re wondering? He was hanging on my leg, fussing and wanting up. He was in my left arm while I tried to help wash beets with my right hand. He was sitting on the kitchen floor crying while I tried to finish up. Basically, he was reminding me why it’s so hard to get things done these days.
